Simple Meals for the Military Family: Greek Yogurt Chicken Salad Sandwich

Spring is here. At least I thought it was…

Anyways, it should be back in the next few days. I hope.

With Summer just around the corner, you may be trying some healthy options for dinner. When you’re cooking for the whole family, that may be a bit challenging. I just found an AWESOME, HEALTHY, EASY, DELICIOUS recipe that can be used for either lunch or dinner.

Greek Yogurt Chicken Salad Sandwich

Ingredients:

  • 1 pound cooked chicken breast, shredded
  • 1/2 cup diced red onion
  • 1/2 cup diced apple (I used a Granny Smith apple)
  • 2/3 cup grapes, halved (I used red seedless grapes)
  • 1/3 cup dried cranberries (I bought this in a bag that also included sliced almonds)
  • 1/4 cup sliced almonds
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon freshly squeezed lemon juice, or more, to taste
  • 1/2 teaspoon garlic powder (I opted out of this)
  • Kosher salt and freshly ground black pepper
  • 4 rolls ciabatta bread, toasted, for serving (I used Hawaiian rolls instead… not very healthy) 

Directions:

  1. In a large bowl, combine chicken, red onion, apple, grapes, dried cranberries, sliced almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper. Serve sandwiches on bread.
  2. That’s it!

This recipe has revamped my afternoon lunches. When I made it, we had leftovers for a few days. It’s sooo good. I even ate the chicken salad without the bread. I recommend making this for a family picnic in the park or an early afternoon dinner.

I can’t lie. I can’t take credit for this recipe. I found it on Damn Delicious, but I can guarantee that it’s delicious (from experience). Be sure to check out their website for other healthy options!

Wisdom Teeth and Love

3026Last Friday, I had my wisdom teeth removed. My surgery was a bit more extensive than most due to my small mouth and five wisdom teeth. Yep, I had five. After an hour and a half, I woke up hazy, confused, and emotional. Luckily, I had Mr. Ellis (my fiance) there to comfort me.

On the ride home, I cried the entire time. Not sure why. I was just crying. I kept apologizing to  him, but he just kept saying that it’s normal to cry after you’re out of anesthesia. He even cried. In the almost 9 years of dating, I never knew this.

As soon as we walked through the door, he helped me up the stairs, fed me all my medication, handed me my heating pad, and ice packs. Before I knew it, he rushed out to CVS for supplies. He came back with a better ice pack, applesauce, mac n chz, and tomato soup. (All my favorite foods when I’m feeling ill.) Luckily, they were all easy for me to eat.

My first meal out of surgery was applesauce. My face was still numb, so he had to spoon feed me. I felt like a baby because some of it kept falling out of my mouth (attractive, right?) All we could do is laugh. (It really hurt to laugh!)

This all happened within three hours. It just took three hours to have a whole new appreciate for him. I learned things about him I never knew. I saw a different side to him that I never knew.  I may think I love him even more, and I didn’t think that was possible.

You wonder why? Why would something like getting your wisdom teeth removed make your relationship even better? The answer is. I have never been in a situation when I solely had to rely on him to take care of me. I’m usually the caregiver. Plus, I’m stubborn. I like to do things myself. Those three hours proved once again that I am the luckiest woman in this world.

Later in the week, he proved it over and over again during my recovery. From constantly traveling up and down the stairs, helping me eat, and keeping me company. When I was nervous about going into public, he told me that I looked beautiful. Even though, I had bruises, messed up lips, and chipmunk cheeks.

Sometimes it takes events like getting your wisdom teeth out to learn more about the true meaning of love. I’m one of the lucky ones to find it so early in life. I promise you that I won’t take it for granted. Without him, I wouldn’t have anyone to share my weirdness with. And that’s no fun!

The Braided Bohemian Updo

Sometimes I get tired of doing the same routine with my hair. I blow dry it, straighten it, or curl it. Yesterday, I decided to live a little and try something new. With Spring in the air, braids and updos are going to be a go to for most. I started off easy by trying Instabraid’s Braided Bohemian Updo.

-hair mist or spray

I started with dry hair (wet hair would probably work best). After separating my four areas, I braided the front first, then the back. (I never teased the top like I was supposed to. Oops.) It took six bobby pins to secure everything in place. Then, I used hair mist to hide some of my frizz.

My first attempt (took 10 minutes) actually turned out pretty decent. My hair stayed in place the entire day, and I actually enjoyed not having my hair in my face. With damper and longer hair, this hairstyle could be a regular choice.

I plan on trying out more braided hairstyles. Most of them are simple and just look complicated. It’s the perfect way to impress your friends and significant other!

Before you start reading, you should know this is me venting. I will be getting my wisdom teeth removed in a couple weeks. My significant other has been asking me to call the insurance company to double check the cost. I understand. I don’t want to pay more than we have to. But, he’s been asking me to do this over and over again. It’s on my list. I just haven’t gotten to it yet. The past two days he’s asked about it, I’ve gone into b**** mode. Seriously, I am 23 years old. I don’t need to be treated like a child.

Sometimes, I really don’t think he understands everything I do. In his mind, I work from home for a few hours, play with my dog, and hang out with friends. So why couldn’t I call the insurance company last week?

The reality is I handle pretty much everything. From bills, doing the laundry, cleaning the house, running errands, working, volunteering, blogging, cooking dinner, attending spouse functions and preparing his lunch for the next day, I’m busy from sun up to sun down. I try to sneak in things on my To Do List everyday, but it can get a little overwhelming. I don’t even have children. (Those of you that do…props!) I get everything done, but it might not be at that very moment. With my surgery being two weeks away, it’s not on my priority list.

I finally explained to him how I felt about his constant reminders. I even gave him a little insight of what I do on a daily basis. I know his job is difficult, mine is too. Our heartfelt discussion ended in a hug, and I called the insurance company today. A little communication can go a long way.

Make Your Valentine’s Day Meaningful

There are way too many expectations. This year, I made a stand against Valentine’s Day. Instead of the usual overpriced candy, roses, and hearts, we will be spending our time together in a more meaningful way. Join me! Focus on what’s really important. Your relationship.

So what can you do on Valentine’s Day?

Candlelight Fondue

Unplug from the TV, cellphone, iPad, and all of civilization. Turn on some music, drink a glass of wine, and chop the vegetables, bread, and meats with each other. As you wait for the oil/cheese/chocolate to heat up, light candles all around the room. I don’t need to tell you how your night will end.

Romantic Getaway

Book a one night getaway for you and your sweetheart! Bed and breakfasts, casinos, beach houses, and cabins make great getaways. Going somewhere unfamiliar can bring you even closer together.

Movie Night

Order take-out and get in your best PJ’s! Each of you pick a movie to be featured for the night. It’s a win-win! You get to watch your chick flick, and he gets to watch his action movie. Try a new homemade cocktail, make flavored popcorn, or bake together.

Backyard Date

Enjoy a date under the stars! Start a fire, and snuggle up close. Roast dinner on the open flames, then end the night with smores.

Valentine’s Day can be more than flowers, candy, and hearts. Unplug not only from your electronics, but from the world’s expectations. Focus on what’s important, each other. Happy Valentine’s Day!

The Super Bowl: A Military Perspective

Super Bowl Sunday is an American tradition. Millions of people with their families and friends sit around the TV eating their hot wings and bags of chips. This year, the Super Bowl had many memorable moments (mostly the ads), but these are the moments that I remembered when I woke up this morning.

This tribute featured a reading of the Declaration of Independence in honor of America’s active service members and veterans. It also included members of the NFL, the Boston Police Department, the Watt Family, the Houston Fire Dept, Dr. Biden and the First Lady.

I tear up just thinking about this commercial. Lt. Chuck Nadd receives a HUGE well-deserved welcome!

Each of these moments brought tears to my eyes. It’s important to show our patriotic spirit and support for the troops. We wouldn’t have our freedom and the Super Bowl without them.  We can’t lose sight of that!

 

No Cabin Fever Allowed

Let’s face it. It gets pretty lonely sometimes. Moving from place to place, meeting new people, and being in a new city makes it harder for you to get out. Especially if you are on the shy side. Luckily that’s not my case. I entered into the military world soon after college, so I was comfortable with being in a new place and meeting new people. I also fill my time with activities, work, and volunteering opportunities. However, I know there are people who struggle with this challenge. And… they end up with cabin fever.

Cabin Fever:  a claustrophobic reaction that takes place when a person or group is isolated and/or shut in a small space, with nothing to do for an extended period. Cabin fever describes the extreme irritability and restlessness a person may feel in these situations. (From Wikipedia)

Cabin fever happens to everyone. It’s happened to me several times. Never fear. I’m here to keep that from happening. Here are some tips below to help!

Host events. You’re not the only one that’s bored. Host a game night, a bible study, or meet up for coffee with a group. Create opportunities for you to meet other people.

Attend events. Most military spouse groups have events throughout the month. Go! 

Get a part-time job. Working not only gets you out of the house, but you also get some extra spending money. Get a job at the cute boutique down the street, a coffee shop, or the gym on base. Need something a little more flexible? Try babysitting or pet sitting.

Get a pet. Of course, you should think about it first! A new pet is a big responsibility, but it’s nice to have company. Plus, there are a number activities you can do with your new best friend.  It’s hard to be lonely with an adorable puppy or a cuddly kitty around. Adopt from a local shelter to make it a more rewarding experience.

Treat yourself. All you mommies out there focus on your children 24/7. It’s time to treat yourself. Choose one day a week to treat yourself to a flavored latte, a trip to your favorite ice cream shop, a trip to the bookstore, or a night out with the girls. After all, you deserve it!

Try a new hobby. Have you ever been interested in something, but never tried it? Here’s your chance. Start a blog, create a book club, take up gardening, ect. There are countless options. Remember, a hobby is supposed to be enjoyable, not extra work.

Get a change of scenery. Go check out a new place in town once a week! There’s plenty to see from parks, stores, museums, and art galleries. Bring your kids or your furry friend!

Volunteer. Animal shelters, military organizations, churches, and nursing homes are always in need of volunteers. Volunteering is both rewarding and fun! It’s a great way to meet new people.

See!  There’s no reason for you to be bored or lonely. What are you waiting for? Seize the opportunity to have new friends and unforgettable memories. Try a couple of the tips above, and I promise you’ll feel better. I do.

If you ever see another spouse struggling with cabin fever, help them out. Invite them over for tea, or to a group dinner. That can make a big difference with their military experience and their happiness. If I didn’t have the guidance I had from other spouses when I first arrived, I wouldn’t be where I am today. We are here for each other. Remember that always, and you’ll make a difference!

Super Bowl Guilty Pleasure: Buffalo Chicken Dip

It’s almost time for the big game! My favorite part about the Super Bowl, aside from the game and commercials, is the FOOD! This is the one time of the year that I completely destroy my healthy eating habits. And I’m ok with that! Every football occasion, my man asks for me to make my Buffalo Chicken Dip. He can’t ever get enough!

Ingredients:

  • 2 Large Cooked Chicken Breasts/2 12.5 oz Cans of White Chicken Breast
  • 2 8 oz Packages of Cream Cheese
  • 6 oz of Louisiana Buffalo Wing Sauce
  • 8 oz of Hidden Valley Ranch
  • 1.5 c. of Sharp Cheddar Cheese
  • 1 Bag of Tortilla Chips

Directions:

  1. Preheat oven to 375 degrees
  2. Spread cream cheese on the bottom of a small/med casserole dish.
  3. Shred cooked chicken breast and put in a mixing bowl.
  4. Mix hot sauce, ranch, and 1 cup of cheese in with the chicken.
  5. Put buffalo chicken mixture in dish on top of the cream cheese.
  6. Bake for 15 minutes or until bubbling
  7. Take out and put remaining cheese on top.
  8. Bake for another 5 minutes
  9. Cool. And enjoy!

Feel free to make adjustments based on how you handle spicy foods (mild, medium, or hot). This is my guilty pleasure! My mouth waters just thinking about it. Make this dip, and you’ll be the hit of the party! Go Broncos!

Don’t Be a Health Risk

I woke up. Hot and sweaty. Coughing.  And a headache.  No warning. I had the flu. During my four days of misery in bed, I started thinking about the bigger picture. I realized that I had been selfish to not get the flu shot. I should have been more careful. More responsible.

Currently, my significant other is in Undergraduate Combat Systems Officer Training, a rigorous nine-week training school. He goes to work, comes home to study, goes to bed, and then, does it all over again the next day. If he were to get sick, it would immensely affect his career. The bigger picture: our lives.

I made a promise to myself while I dismally ate my tomato soup. I would do everything in my power to keep me and my spouse healthy

  1. Get the Flu Shot
    I have always been skeptical of the Flu Shot. I have heard a number of horror stories about people having bad reactions or getting sick as a result of getting vaccinated. The reality is my spouse is required to get the flu shot, so shouldn’t I? Also, I’m around other spouses that are pregnant or have little ones. I don’t want to risk their lives.
  2. Carry Hand Sanitizer in my Purse
    I go to the gym, the grocery store, Starbucks, bars, restaurants, and the movie theater. Thousands of people touch doors, counters, shopping carts, and chairs. All it takes is one sick person to make me sick.
  3. Get More Vitamin C and Vitamin D
    Vitamin C serves as an antioxidant, so the nutrient can help prevent colds. I plan on getting my Vitamin C by eating more fruits and veggies. Vitamin D helps sustain the immune system. I plan on spending more of my afternoons at the park, walking my dog, or sitting by a window.
  4. Sleep More
    Every night, I tell myself that I need to go to bed by 10 p.m. Before I know it, it’s already 11:15 p.m. I wake up the next day wishing that I went to bed earlier. I’m going to get ready for bed at 9:45 p.m. every night.  I will.
  5. Work Up A Sweat
    Exercise helps the immune system stay strong. It’s actually helped me kick a couple colds. I vow to work out at least four days a week. No excuses.

There’s a little something that everyone can do to decrease their chances of getting sick. It’s important to create healthy habits such as washing your hands regularly, avoid touching your face, and staying away from sick people.

I haven’t been taking it as seriously as I should. I never had to. But now, we have so much to lose, and I don’t want to be responsible for risking our livelihood and ultimately, his dream.

Don’t be a health risk.

Simple Meals for the Military Family: Barbecue Chicken Cobb Salad

When you’re a military wife, the last thing you want to do is spend your entire evening cooking.  Personally, I like to hang out in the backyard with my soon to be hubby as we play with our not so small puppy. I made a discovery months ago, and I am completely obsessed with this Barbecue Chicken Cobb Salad. It’s delicious, fast , and easy! Just the way I like it. (I’m still working on my cooking skills…)

BARBECUE CHICKEN COBB SALAD (From Publix Apron’s Simple Meals) 4 SERVINGS

Ingredients:

  • 1 head of iceberg lettuce
  • 1 large Granny Smith apple
  • 2 plum tomatoes
  • 12 oz breaded chicken tenders
  • 1 c. shredded Sharp Cheddar cheese
  • 1/2 c. canned whole kernel corn
  • 1/4 c. + 2 tbs. barbecue sauce
  • 2 tbs. light ranch dressing

Steps:

  1. Prepare chicken following package instructions for microwave. Cut into bite-size pieces.
  2. Core apple’ cut into small bite-size pieces; chop tomato, and shred lettuce.
  3. Place chicken and 1/4 cup of barbecue sauce in a large bowl; toss and evenly coat chicken; remove from bowl.
  4. Place lettuce in the same bowl, add remaining 2 tablespoons of barbecue sauce and ranch dressing. Toss and coat evenly.
  5. Transfer lettuce to serving platter. Arrange ingredients in rows on top of lettuce in this order: cheese, apples, chicken, tomatoes, and corn. SERVE (I recommend completing this meal with garlic bread.)

This meal only takes 15 minutes! And it’s one of my favorite dinners! The only downside is there are never leftovers…
